Couple questions:

1. What is the exact product and version you are using?

2. Are you referring to the surface elevations at the alignment along with the surface elevations if you offset the alignment the 2 meters you specified?  If using InRoads, you can do this by creating parallel alignments and creating a Vertical alignment through File > Import > Vertical From Surface so it will drape the offset alignment onto the surface to create the profile.  Or you can go through the Surface Properties > Offsets and set up all the necessary offsets to display as graphics in a profile which can be imported as new vertical alignments.  But this of course is dependent on the product you are using.

3.  If using OpenRoads geometry you can use the "Single Offset Entire Element" to copy to the offset and drape it to the surface to get the elevations.
